
Ingredients
mini flatbread / naan bread
cherry tomatos
red onion
your favorite pesto (we used a basil and a sun-dried tomato pesto)
baby spinach
cheese of choice (we used a sage derby special for St. Patrick's Day)




Instructions
Preheat oven to 350 degrees
Bake cherry tomatoes until tender, then smash with a fork
Arrange flatbread on baking sheet pan
Spread Pesto on the flatbread
Slice red onion
Slice kalamata olives in 1/2
Arrange all toppings on the flatbread
Top with cheese (we used a clover cookie cutter for our cheese)
Bake at 350 degrees for 10-12 minutes or until edges of flatbread is golden brown

With St. Patrick's Day around the corner we just had to think of something fun and festive. Mini Pizza's came to mind, then we had to think of a creative way to make it "green" We found this amazing sage derby cheese at Aldi and it's green! Although cheese will not hold shape once melted, it's still so vary festive with the green cheese!
