Ingredients
favorite pancake mix (plus required ingredients for mix)
Andes mints
green food coloring
Cream Cheese Icing
4 tbsp. cream cheese
2 tbsp. milk
3 tbsp. confectioners' sugar
Instructions
Make pancakes: according to package
Add a 1/4 Cup of andes mints to the mixed batter
Add a few drops of green food color until desired shade
Lightly grease a griddle or 12-inch, nonstick skillet; heat on medium heat until very hot
Drop rounded teaspoonfuls of batter onto hot griddle. Cook for 2 to 3 minutes, or until cooked through, flipping once
Make topping: In medium bowl, with hand-mixer on medium, beat cream cheese, confectioners' sugar, and milk until smooth
Serve pancakes topped with cream cheese glaze and a few extra andes mints
