Vegan Asparagus & Sun Dried Tomato Pasta


1 bundle asparagus chopped

1/3 c sun dried tomatoes in oil

1 lemon

black pepper

red pepper flakes (optional) to taste

1 bottle of favorite peppercorn sauce/dressing

1 box of penne noodles (we do gluten free)

2 garlic cloves pressed


Cook noodles according to package and set aside

Chop asparagus & sun dried tomato, place in a bowl and squeeze 1/2 lemon into bowl

In separate bowl mix 1 bottle of favorite peppercorn sauce/dressing , salt, pepper, pressed garlic and a little lemon zest

Sauté asparagus & sun dried tomato in a pan for about 5 min or until desired crunchiness of asparagus

Combine with cooked noodles and peppercorn sauce mix well and top with fresh lemon juice! serve and enjoy!
