Orange Cranberry Sorbet Cubes

Ingredients 1/2 lb fresh cranberries (about 2 cups) 1 cup agave or maple syrup 1 1/2 c unsweetened orange juice (the juice from about 5 medium oranges) 1 cup water 1/4 tsp salt 1 Tbs grated orange zest

Combine the berries, agave or syrup, juice, water and salt in a heavy saucepan. Stir over medium heat until the mixture comes to a simmer. Cook for 2-3 minutes or until the berries pop and begin to soften. Remove from heat and cool slightly. Transfer the mixture to a blender or food processor and puree (you'll probably need to do this in two batches), then press through a strainer with a spatula or spoon. Stir in the zest. Pour mixture into ice cube trays and freeze until very firm/hard, several hours or overnight. Or, refrigerate mixture for an hour or two and then freeze in an ice cream maker according to the manufacturer's instructions. Recipe Type: Vegan, Clean Eating, Gluten Free
